My kids love to drink Chicha Morada, a refreshing Peruvian purple corn drink, at our favorite Peruvian restaurant in Queens. Do you have no local Peruvian restaurant?
This is a drink you can easily make at home and we do often! The purple corn may be available at your local Latin market. If not you can order online here http://www.amigofoods.com/pefomamo15oz.html.
Most of the corn packages have a recipe on the bag. If it doesn't here's mine:
1 gallon Water
Organic pineapple peel from whole organic pineapple (whenever I'm not ready to make chicha but am cutting a pineapple I just throw the peel in the freezer to use later)
3 Cinnamon sticks
3 Whole cloves
3-5 Purple Peruvian Corn
Sugar
Finely diced apples
6-10 Limes
In a large stock pot add water and cook corn with pineapple peel, cinnamon sticks, and cloves for about one hour.
Drain liquid into a pitcher.
Squeeze out lime juice from limes and add to the pitcher. Be sure to remove any seeds. You want enough limes so that the taste of lime is strong like a lemonade.
Sweeten the drink to your preference. Peruvians prefer it pretty sweet.
Add diced apples to garnish.
Serve chilled.
